Arrachera steak is a Mexican favorite, coming from the abdominal muscles of the cow. During preparation, it's tenderized and marinated, making it as soft as butter.

Machaca is the name used to describe the dried, spiced pork or beef that is popular in Chihuahua. After the beef is rehydrated, it's grilled on the barbeque, chopped or shredded, then mixed with eggs, tomatoes, chopped onion, and salsa. The result is one of the best and most common breakfast meals here.

Other Chihuahua favorites…

Gorditas are another staple item, particularly at the Divisadero Train Station. Think of them as little pies, often stuffed with fillings like cheese and meat. Cochinita pibil is a traditional Mexican dish consisting of slow-roasted pork and is commonly used in tacos. In Mexico, you can also expect to frequently see burritos with stuffed peppers, empanadas (a baked or fried pastry) stuffed with apples, and pork carnitas. More sweet treats include manzanas chapeteadas (candied apples) and nueces garapiñadas (candied walnuts).
